vs. Spray Drying.
Three samples of freeze-dried kiwifruit powder were sourced from China from different distributors. All three samples were expected to be of similar quality to Actazin®. Results showed little to no dietary fibre or any actinidin testing, indicating that the freeze drying processes they underwent inactivated the enzymes and altered the composition.
